My Favorite Breakfast Meal...

Hi everyone!

I'mmmm back with my very first REAL content blog post. Lol. So as many of you who follow me or the store know, I am obsessed with food - unfortunately, I'm a big CARBivore which means I try to keep my meals at home fairly healthy since I overload on carbs and other wonderfully delicious - yet not so healthy options when I go out to eat. 

My all-time favorite breakfast food for the past year now has been...

AÇAI BOWLS!!!

Now, if you're counting calories and hoping I have a chart of sugars, carbs, calories or any other nutritional information, I ain't your girl. I don't count calories or carbs, I am mindful of sugars and ingredients and that's all I can say about that! I always avoid ANY form of sugars when buying groceries for my house unless it is sweetened with dates, coconut sugar or anything non-processed and natural. 

As I strolled through Whole Foods Market a few weeks ago on the hunt for some granola, I found that there were no granola brands, whether health/organic claims or not, that I personally considered "healthy," so I made my own! I honestly did not measure anything, I completely winged my recipe and it turned out really good. So I'm going to list what I remember putting into it, again, no measurements but you can wing this too! it's SO easy.

 

Home-made Granola

  • Organic Rolled Oats
  • Puffed Quinoa
  • Puffed Kamut
  • Cinnamon
  • Vanilla Extract
  • Cacao Nibs
  • Coconut Flakes
  • Date Syrup (Ingredient: 100% Organic Medjool Dates)
  • Coconut Oil
  • Pinch of Salt
  • Organic Traditions "Chocolate Latte with ashwagandha and probiotics"

That's it, folks! I mixed that all up, put it on a baking tray lined with parchment paper and popped it into the oven. I kept my eye on it until I felt like it was toasty and brought it out and set to cool. 

Now on to my favorite part, my açai purée. It took a lot of trial and errors for me to finally create a recipe that I thoroughly enjoyed eating and consider good enough to share with all of you. I'm not gonna lie, I kind of winged this too but I really tried to "measure with my eyes" so here goes nothing...

This recipe was enough for one large bowl for myself, I suggest trying it out like this first to see if you like it, if so, make another batch and share :) 

AÇAI PURÉE RECIPE 

  • 2 PACKETS OF UNSWEETENED FROZEN AÇAI PURÉE
  • 1/2 AVOCADO
  • 1/4 CUP UNSWEETENED ALMOND MILK
  • 1/2 FROZEN BANANA
  • 1/2 - 1 TSP CINNAMON 
  • 1 1/2 - 2 TBSP ORGANIC MEDJOUL DATE SYRUP (or pop in a date or two)
  • 1/4 CUP (or less) FROZEN RICED CAULIFLOWER
  • 1 TBSP ORGANIC PEANUT BUTTER

*In order to have a thick, non-watery açai purée, the more frozen ingredients, the better*

Blend it up, push down and blend again! I highly recommend getting a VITAMIX if you don't already have one, it's a game-changer and worth every single penny. 

TOPPINGS

  • Banana, Raspberry, Blueberry, Hemp Seeds, Unsweetened Coconut Flakes, Home-Made Granola
